Peanut Butter Thumbprints

What's going on here
Peanut butter dough is a better thumbprint base than plain shortbread, and the reason is structural. It barely spreads, because it's stiff and low in water, so a pressed well survives the oven far more reliably than one pressed into a butter-rich dough that flows outward as it heats. The same two-stage press applies — shape the well before baking, then firm it up again partway through and add the jam then, so the preserve only gets a few minutes of heat and sets to a gloss instead of boiling thin and running over the edge. Flavour-wise, salt matters more here than in most cookies: it's what keeps the sweet jam and the rich peanut from collapsing into one flat note, and it's why the dough is salted a little more heavily than the classic version.

Instructions
Dough
- Cream the butter, peanut butter, and both sugars until light, about 3 minutes.
- Beat in the egg and vanilla.
- Whisk the flour, baking soda, and salt together and mix in just until combined.
Chill
- Chill 45 minutes.
Shape
- Roll into walnut-sized balls, space on a lined sheet, and press a deep well into each with the round end of a wooden spoon.
Bake
- Bake at 175°C (350°F) for 7 minutes, until set but still pale.
- Take the sheet out, re-press each well firmly, spoon in about half a teaspoon of jam, and return to the oven until the edges are golden.
Cool
- Cool on the pan 10 minutes — the jam is molten.
