No-Bake Peanut Butter Cookies
Boiled, dropped, and set on the counter โ oats, cocoa, and peanut butter, no oven at all.

Ingredients
Syrup
- 2 cups Granulated sugar
- 1/2 cup Milk
- 1/2 cup Butter
- 1/4 cup Cocoa powder
- 1/4 tsp Salt
Mix-ins
- 3/4 cup Peanut butter
- 1 tsp Vanilla extract
- 3 cups Rolled oats โ quick oats work here and set faster
Instructions
Prep
- Lay out two sheets of parchment or wax paper and measure the oats, peanut butter, and vanilla before you start. Once the syrup is ready you won't have time.
Syrup
- Combine the sugar, milk, butter, cocoa, and salt in a saucepan over medium heat and stir until the butter melts and it comes to a full rolling boil.
- Boil hard for exactly 1 minute, stirring, then take it off the heat immediately. (Tip: Time it from a boil you can't stir down, and use a timer rather than counting. Under a minute and they won't set; over it and they go dry and crumbly.)
Mix-ins
- Off the heat, stir in the peanut butter and vanilla until completely smooth, then the oats until evenly coated.
Set
- Working fast, drop tablespoon mounds onto the parchment and leave them to set at room temperature until firm. (Tip: The mixture stiffens as it cools, so the last cookies will be harder to scoop. Don't stop to tidy them up.)
Tips
- Humidity is the hidden variable: On a damp day these take longer to set and can stay tacky, because sugar candy is sensitive to ambient moisture. If your kitchen is humid, boil for an extra 10โ15 seconds.
- They never set / they turned crumbly: Both are boil-time errors in opposite directions. Never set means under-boiled and too much water is left in the syrup; dry and crumbly means over-boiled and the sugar concentrated too far. Neither is fixable after the fact โ the boil is the whole recipe.
