No-Bake Peanut Butter Cookies

Steps

• Prep: Lay out two sheets of parchment or wax paper and measure the oats, peanut butter, and vanilla before you start. Once the syrup is ready you won't have time.
• Syrup: Combine the sugar, milk, butter, cocoa, and salt in a saucepan over medium heat and stir until the butter melts and it comes to a full rolling boil.
• Syrup: Boil hard for exactly 1 minute, stirring, then take it off the heat immediately.
  ⏱ Start 1 min timer

  Tip: Time it from a boil you can't stir down, and use a timer rather than counting. Under a minute and they won't set; over it and they go dry and crumbly.

• Mix-ins: Off the heat, stir in the peanut butter and vanilla until completely smooth, then the oats until evenly coated.
• Set: Working fast, drop tablespoon mounds onto the parchment and leave them to set at room temperature until firm.
  ⏱ Start 30 min timer

  Tip: The mixture stiffens as it cools, so the last cookies will be harder to scoop. Don't stop to tidy them up.
