Lemon Poppyseed Muffins
Zest rubbed into the sugar for real lemon flavour — the poppy seeds are mostly texture.

Dry
- 3/4 cup Granulated sugar
- 2 tbsp Lemon zest
- 2 cups All-purpose flour
- 2 1/2 tsp Baking powder
- 1/2 tsp Salt
- 2 tbsp Poppy seeds
Wet
- 3/4 cup Milk
- 1/2 cup Neutral oil
- 1 Egg
- 2 tbsp Lemon juice
Glaze
- 3/4 cup Icing (powdered) sugar
- 2 tbsp Lemon juice
Instructions
Prep
- Heat the oven to 190°C (375°F) and line a 12-cup muffin tin.
Dry
- Rub the sugar and lemon zest together with your fingertips until damp and fragrant, then whisk in the flour, baking powder, salt, and poppy seeds. (Tip: This step is where the actual lemon flavour comes from — rubbing releases the oils from the zest into the sugar far more effectively than stirring the zest in loose.)
Wet
- Whisk the milk, oil, egg, and lemon juice together.
Combine
- Fold the wet into the dry just until combined.
Bake
- Divide among the muffin cups and bake until a skewer comes out clean.
Glaze
- If using, whisk the icing sugar and lemon juice together and drizzle over the cooled muffins. (Tip: Wait until they're fully cool — a warm muffin will just absorb the glaze rather than holding a visible coat.)
Tips
- Flavour tasted flat: The zest likely wasn't rubbed into the sugar, or too little was used. This single step does more for the finished flavour than any other ingredient change in the recipe.
- Chia seeds as a substitute: If you're out of poppy seeds, chia seeds give a very similar crunch and appearance, though a milder, less distinctly nutty flavour — a fair swap given how little the seeds actually contribute to taste here.
