Cheese Scones
A savoury, sharp-cheddar scone with a whisper of mustard powder to sharpen the cheese further.

Ingredients
Dough
- 2 1/4 cups All-purpose flour
- 1 tbsp Baking powder
- 1 tsp Mustard powder
- 1/4 tsp Salt
- 1/3 cup Cold butter, cubed
- 1 cup Sharp cheddar, shredded and kept cold
- 3/4 cup Milk, cold
Instructions
Prep
- Heat the oven to 200°C (400°F) and line a baking sheet.
Dough
- Whisk the flour, baking powder, mustard powder, and salt together, then cut in the cold butter until it looks like coarse crumbs.
- Toss in the cold cheddar, then stir in the milk just until it comes together into a soft dough.
Shape
- Pat into a round about 3/4 inch thick and cut into 8 wedges.
Bake
- Arrange on the sheet and bake until golden and the exposed cheese is bubbling.
Tips
- Why mustard powder, not mustard: Powdered mustard adds sharpness without the vinegar and moisture prepared mustard would bring, which could throw off the dough's hydration. A little goes a long way.
- Serve warm with butter: These are savoury enough to stand in for a dinner roll — split and buttered while still warm is the classic way to eat them.
