Cheddar Chive Biscuits
A savoury drop biscuit loaded with sharp cheddar and fresh chives.

Ingredients
Dough
- 2 cups All-purpose flour
- 1 tbsp Baking powder
- 1/4 tsp Salt — reduced — the cheese brings its own
- 1/3 cup Cold butter, cubed
- 1 1/4 cups Sharp cheddar, shredded and kept cold
- 3 tbsp Fresh chives, chopped
- 1 cup Buttermilk, cold
Finish
- 2 tbsp Butter, melted
Instructions
Prep
- Heat the oven to 220°C (425°F) and line a baking sheet.
Dough
- Whisk the flour, baking powder, and salt together, then cut in the cold butter until it looks like coarse crumbs.
- Toss in the cold shredded cheddar and chives, then stir in the buttermilk just until combined into a shaggy dough.
Shape
- Drop rough mounds onto the sheet, spaced apart. (Tip: Keep the cheese cold right up until it goes in the oven — melted or softened cheese blends into the dough instead of staying in distinct pockets.)
Bake
- Bake until golden and the cheese on top is bubbling and lightly browned.
Finish
- Brush with melted butter as soon as they come out, if using.
Tips
- Shred your own cheese: Pre-shredded bagged cheese is coated in an anti-caking starch that keeps it from melting quite as cleanly. A block grated fresh melts more evenly into pockets rather than gumming up.
- Biscuits spread flat and greasy: The cheese or butter warmed up before baking. Both need to stay cold through mixing and shaping — chill the shaped dough for 10 minutes if your kitchen is warm.
